  • 2/3 cup 185 g well-mashed very-ripe bananas (this is typically 1 ½ bananas for me)
  • 1 cup 226 g unsalted butter melted and cooled
  • 1 1/3 cup 200 g light brown sugar firmly packed
  • 1/3 cup 135 g granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 3 cups 375 g all-purpose flour
  • 2 Tablespoons cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon table salt
  • 3/4 teaspoon ground cinnamon
  • 1 1/2 cups 255 g chocolate chips I used White Chocolate!
  • 1 cup 115 g chopped walnuts optional

Instructions
 

  • Combine thoroughly mashed banana, cooled melted butter, light brown sugar, granulated sugar, egg yolk, and vanilla extract, stirring until fully blended. The ingredients for this step include ⅔ cup (185 g) of well-mashed banana, 1 cup (226 g) of unsalted butter, 1 cup (200 g) of light brown sugar, ⅔ cup (135 g) of granulated sugar, 1 large egg yolk, and 2 teaspoons of vanilla extract.
  • In a separate mixing bowl, whisk together all-purpose flour, cornstarch, baking powder, baking soda, table salt, and ground cinnamon. The ingredients for this dry mixture include 3 cups (375 g) of all-purpose flour, 2 tablespoons of cornstarch, ½ teaspoon of baking powder, ½ teaspoon of baking soda, ¾ teaspoon of table salt, and ¾ teaspoon of ground cinnamon.
  • Gradually incorporate the flour mixture into the butter/banana mixture, doing so in 3-4 parts. Add chocolate chips and chopped walnuts if desired, stirring until thoroughly combined. The quantities for this step are 1 ½ cups (255 g) of chocolate chips and 1 cup (115 g) of chopped walnuts.

  • Scoop the dough into 1 ½ tablespoon-sized portions and drop them onto the prepared baking sheet, ensuring at least a 2-inch spacing between each. Bake in a 350F (175C) oven for 12-14 minutes. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack for complete cooling before indulging.
