  • 2 ripe bananas mashed
  • 1 cup fresh strawberries diced
  • 2 cups gluten-free flour blend
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions
 

Directions:

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a large mixing bowl, combine the mashed bananas, diced strawberries, eggs, granulated sugar, vegetable oil, and vanilla extract. Mix until well combined.
  • In a separate bowl, whisk together the gluten-free flour blend, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing and serving.

Notes

I used a 8x8 Sized pan and it turned out amazing!!
