  • 1 teaspoon salt
  • 1 tablespoon granulated sugar optional
  • 1 cup buttermilk
  • 1/4 cup water
  • 2 tablespoons bacon grease or vegetable oil
  • Additional bacon grease or vegetable oil for cooking

  • In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar (if using). Mix well to combine.
  • Add the buttermilk, water, and bacon grease or vegetable oil to the dry ingredients. Stir until the batter is smooth and well combined.
  • Heat a skillet or griddle over medium heat and add a small amount of bacon grease or vegetable oil to coat the surface.
  • Pour about 1/4 cup of batter onto the hot skillet for each hoe cake, spreading it out slightly with the back of a spoon to form a thin pancake.
  • Cook the hoe cakes for 2-3 minutes on each side, or until golden brown and crispy around the edges.
  • Remove the hoe cakes from the skillet and place them on a plate lined with paper towels to drain any excess grease.
  • Serve the hoe cakes warm, topped with butter and syrup for a sweet treat, or alongside your favorite savory dishes.
