Ingredients:
- 1 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar optional
- 1 cup buttermilk
- 1/4 cup water
- 2 tablespoons bacon grease or vegetable oil
- Additional bacon grease or vegetable oil for cooking
Directions:
In a large mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar (if using). Mix well to combine.
Add the buttermilk, water, and bacon grease or vegetable oil to the dry ingredients. Stir until the batter is smooth and well combined.
Heat a skillet or griddle over medium heat and add a small amount of bacon grease or vegetable oil to coat the surface.
Pour about 1/4 cup of batter onto the hot skillet for each hoe cake, spreading it out slightly with the back of a spoon to form a thin pancake.
Cook the hoe cakes for 2-3 minutes on each side, or until golden brown and crispy around the edges.
Remove the hoe cakes from the skillet and place them on a plate lined with paper towels to drain any excess grease.
